Broiled Lamb Chops
8-12 lamb chops
2 T. onions, small dice
4 T. olive oil
1 T. rosemary leaves, dried
1 T. oregano dried
1 T. garlic, minced
sea salt and black pepper
2 T. butter
1 T. garlic, minced
3 T. Lemon Juice
Method:
Place chops in a glass or glass ceramic dish. Drizzle with lemon juice then oil. Combine onions, rosemary, oregano, garlic, salt and pepper in a glass mixing bowl. Pour over chops and refrigerate for two to three hours.
Preheat broiler until very hot. Place chops in oil coated broiler pan.
Broil chops under high heat approximately 3-4 minutes.
Turn chops over and broil 3-4 additional minutes for rare doneness.
Serve with mint sauce or mint jelly and roasted potatoes
