Here is a little change from the traditional roasts that you can prepare for Sunday Dinner.
Pancakes or waffles topped with a couple of sausages of your choice. Then add
butter with real Canadian Maple syrup. It will be a pleasant change and quite easy to make
with great appeal for teenagers' picky appetites.
Perfect Pancakes
Serve these pancakes with butter and real maple syrup.
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 large egg, slightly beaten
2 tablespoons melted butter
milk, just enough to make pourable batter
Combine dry ingredients.
Stir in the beaten egg, melted butter, and enough milk for batter to pour easily.
Mix lightly to blend.
Cook pancakes on a hot, well greased griddle.
This recipe for pancakes makes 2 to 3 servings, and can be easily doubled for a family.
Belgian Waffles
3 c. flour
2 tbsp. baking powder
2 tbsp. sugar or 1 tbsp. honey (for browning)
1 stick butter, melted
6 eggs, separated, beat separated egg whites, add 1/8 tsp. cream of tartar
3 c. milk, warmed in microwave
1 tsp. salt
Beat egg whites stiff, but not dry; set aside. Beat egg yolks until thick and lemon colored.
Continue beating adding butter first then milk; add dry ingredients; beat.
Fold in egg whites.
Pour batter onto hot Belgian waffle maker. (For a 2 square waffle, use 3/4 to 1 cup batter.)
Serve with butter, maple syrup, whipped cream, fresh strawberries, blueberries, sliced kiwi, peaches, etc.Makes 9 to 10 waffles.
Fruit Yogurt Pancake Recipe
2 cups flour
5 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 eggs; slightly beaten
1 cup fruit flavored yogurt
1 cup water
4 Tbsp. melted butter
Combine dry ingredients in large bowl. Whisk together remaining
ingredients and add to flour mixture. Preheat griddle, oil lightly,
and ladle 1/4 cup batter onto griddle for each pancake.
Cook until bubbly, turn and cook until light brown.
Quick Skillet Potato Pancake
Ingredients :
1/3 c. instant mashed potato flakes
3 tbsp. self-rising flour
1/2 c. skim milk
1/4 c. minced onion
1 egg, beaten
1/8 tsp. salt
Dash each pepper and ground nutmeg
1 tbsp. vegetable oil
1/2 c. maple syrup
Makes 2 servings, 2 pancakes each. In small bowl combine potato
flakes and flour; add remaining ingredients except oil and
applesauce and, using a fork, blend thoroughly. In 10 inch nonstick
skillet heat oil; drop batter into skillet by heaping
tablespoonsful, forming 4 pancakes. Cook until bottoms of pancakes
are browned; turn pancakes and brown other side. Remove to serving
plate and serve with applesauce
Cornmeal Pancake Recipe
Cornmeal pancakes made with buttermilk.
Serve these corn cakes with maple syrup and butter.
1 egg, separated
2 cups buttermilk
2 tablespoons vegetable oil
1/2 cup sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon sugar
1 1/2 cups cornmeal, unsifted
Beat egg whites until stiff; set aside. Slightly beat the egg yolk in mixing bowl;
Blend in buttermilk and oil.
Mix together the flour, soda, salt, sugar, and cornmeal; blend into the liquid mixture until smooth.
Fold in beaten egg white. Let batter stand for 10 minutes.
Bake on hot greased griddle until nicely browned on both sides.
These cook a little slower than pancakes.
Serve with butter and warmed syrup.
Also delicious with fried ham or bacon on the side.
